Akki Shavige (rice vermicilli) is good option for a healthy breakfast. It is easy to digest, rejuvenates the body, helpful in cases diarrhea and dysentery. Akki Shavige a one pot meal, quick to prepare but no compromises in terms of flavours and nutrition. To make it more nutricious you can add loads of veggies and nuts, all loaded with healthy fats, vitamin B1 and vitamin E alongside fibers.

1 cup rice vermicili, 1/2tsp mustard seeds, 1 onion, few curry leaves, 4-5 cashew, salt to taste, 2 tbsp oil, 1 tbsp lemon juice, 1 tbsp grated coconut
1. Heat oil in a thick bottom pan, add mustard seeds when it starts popping, add chopped onion, cashew and curry leaves.
2. Stir fry for 1-2 minutes, then add roasted vermicilli and fry for 1 minute.
3. Now add 2 cups of water and mix well add a pinch of salt.
4. Cook covered till done. Lastly, add lemon juice and grated coconut, give a nice mix.
Serve in lukewarm state. Your steaming hot flavorful meal is ready in no time!
