Aloo Capsicum Paneer

Ingredients to make Aloo Capsicum Paneer:

1 sliced potato, 3 medium capsicums chopped into square pieces, 2 pureed tomatoes, 2 finely chopped onions, ½ tsp chopped ginger, 1 tsp grated coconut, ½ tbsp dry coriander seeds, 4 chopped cashew nuts, ½ tsp poppy seeds, 1 dry red Kashmiri chili, ½ tsp cumin seeds, 1 tsp turmeric powder, ½ tsp red chili powder, 1/4 tsp gram masala powder, 3/4 cup water, ½ tsp kasuri methi, 2 tbsp fresh cream, 3 tbsp oil, ½ tsp salt.

Steps to make Aloo Capsicum Paneer:

1.Take a heavy based pan and add ½ tbsp oil into it. Now add some cumin seeds and chopped capsicum to this oil. Add salt as per your taste and mix well.

2. Shallow fry for atleast 3-4 minutes till they turn tender. Now place them in a plate and keep aside.

3. Heat 1 tbs oil in a pan and add chopped ginger, grated coconut, dry coriander seeds, cashew nuts, poppy seeds, dry red chilli, cumin seeds and saute for 30 seconds. Add chopped onion and saute till it turns golden brown in color.

4.Turn off the flame and transfer this mixture to a bowl. Let it cool and then grind it to a fine paste.

5.Now add half tsp oil into the same pan and fry this paste for 2-3 minutes. Add red chilli powder, turmeric powder and mix well.

6.Add crushed tomato puree and fry for 3-4 minutes.

7.To this, add garam masala, salt and 3/4 cup water. Bring mixture to a oil and cook for 2-3 minutes.

8.Add capsicum, potato and paneer along with crushed kasoori methi leaves. Stir in between and then add cream.

Serve hot with roti and naan.
