This is a simple lip-smacking dish to be served with roti or rice to make everyone fan of your cooking. The brinjal in the recipe is packed with vitamin A, folate and fibre.

2 brinjals, 2 chopped tomatoes, 2 chopped onions, 1 tsp ginger-garlic paste, 1 tsp coriander powder, 1/2 tsp turmeric powder, 1/2 tsp cumin powder, 1⁄2 tsp garam masala, a pinch of asafoetida, coriander leaves for garnishing, mustard oil
1. Wash and cut the small cubes of brinjals.
2. Heat 1 tbsp mustard oil in a kadhai, add brinjal cubes and saute it for 2-3 minutes. Make sure brinjals should not be mashed but soft.
3. Take out the brinjals from kadhai and keep aside. Heat 2 tbsp oil in the same kadhai, add asafoetida and chopped onion and fry till they turn pink in colour.
4. Add ginger-garlic paste and fry for another 1 minute. Add coriander powder, cumin powder, turmeric powder, garammasala and tomatoes.
5. Saute it for next two minutes and then add brinjal pieces to it. Mix well and allow it to cook to 2-3 minutes on medium flame.
Garnish it with coriander leaves. Serve this main-course dish with chapati or paratha.
