This simple chana masala assembles quickly and results in a flavourful, inexpensive meal that provides a complete iron, protein and magnesium in your diet.

1 cup white chana (kabuli chana), 2 onions chopped, 2 tomatoes chopped, 1 tsp ginger-garlic paste, oil, coriander leaves, lemon, water, salt, 1 bay leaf, 1tsp cumin seeds, 1 tsp coriander powder, 1/4 tsp garam masala.
1. Wash and soak chana over night or for atleast 4-5 hours.
2. Wash chana once again and boil them in enough water in pressure cooker.
3. Take chopped onion and tomatoes and grind it to fine paste in a mixer.
4. Heat 2 tbsp oil in a kadai, crackle the cumin seeds. Add bay leaf. Add ginger-garlic paste and saute for a while.
5. Now add onion tomato paste and fry on medium heat till golden brown. Add turmeric powder, coriander powder.
6. Fry until the oil starts separating from the mixture. Add enough water to make thick gravy.
7. Bring it to boil. Add chana, stir well and cook over medium heat for 4-5 minutes.
Squeeze a lemon on it. Garnish it with coriander leaves and serve with evergreen favourite pooris.
