This is another perfect dish to beat the heat. You will like to eat these pumpkins as finger food too. Pumpkin has a good amount of Thiamine, Niacin, Vitamin B6, Folate and Manganese and a very good source of Dietary fiber, Vitamin A, Vitamin C, Vitamin K and Potassium, Phosphorus.

Contents
1 cup chopped pumpkin (small cube size), ¼ tsp turmeric powder, ¼ tsp asafoetida, salt to taste, water as required, 1 tbsp chopped coriander leaves
For gravy:
½ cup grated coconut, 1 tsp urad dal, 2 tsp coriander seeds, 1 small red chilli, 2 tsp coconut oil, ½ tsp cumin seeds, ½ tsp mustard seeds, 5-6 curry leaves
1. Bring water to boil in a thick bottomed pan, add the washed and chopped pumpkin pieces, turmeric, and asafoetida. Cook the pumpkin until they are soft and tender.
2. Dry roast the urad dhal, coriander seeds, cumin seeds and the small red chilli.
3. Grind the grated coconut along with the dry roasted ingredients.
4. Add the ground paste to the cooked pumpkins and salt to taste.
5. Heat oil in a tempering pan, add mustard seeds, when they start sputter, add the curry leaves.
6. Add the tempering to the pumpkin gravy.
Treat today with Kaddu in Coconut Gravy mixed with steamed rice for lunch.
