Lachko Dal is a tasty delicacy from Gujarat. The creamy texture of the dal with dollops of ghee make it an excellent combination with rice or roti. It is high on protein and hence, a very healthy food.

1 cup toovar (arhar) dal, 1 tbsp ghee, ½ tsp cumin seeds (jeera), ½ tsp turmeric powder (haldi), 1 tbsp grated jaggery (gur), salt to taste
1. Combine the dal with 1½ cups of water and pressure cook for 2 to 3 whistles. Keep aside.
2. Heat the ghee in a deep pan and add the cumin seeds.
3. When the seeds crackle, add the dal, turmeric powder, jaggery and salt, mix well and simmer for 8 to 10 minutes or till the dal thickens, while stirring occasionally.
Serve hot with rice or roti and ghee.
