Green peas are a very good source of vitamin K, manganese, dietary fiber, vitamin B1, copper, vitamin C, phosphorus and folate. They are also a good source of vitamin B6, niacin, vitamin B2, molybdenum, zinc, protein, magnesium, iron, potassium and choline. Whereas rice is a good source of carbohydrates. Methi Matar Rice is a nutritious blend of these two along with tangy tomatoes and methi leaves. It is a very simple dish that can be served with different varieties of dal.

Rice-1 cup, salt-to taste, water-2 cup, oil-1 tsp, tomatoes-1 small, green peas-1/4 cup and, methi leaves-few
1. Wash rice and keep aside. Wash and chop the tomatoes.
2. Heat oil in a pressure cooker and add green peas and chopped tomatoes in it. Sauté for 5 minutes.
3. Add methi leaves and salt. Mix well.
4. Add rice and water.
5. Pressure cook till 2 whistle on medium flame.
Turn off the flame and serve hot with dal.
