Mexican Pocket is a mommy baby favorite breakfast recipe as it consumes less preparation time and most importantly it contains lot of nutrients packed. It mainly consists of wheat flour, rich in fiber that helps in good digestion, bell pepper, which helps in improving immune system, and is also good for eye sight and brain development.

Ingredients to make Mexican Pocket:

1 cup wheat flour, ¼ cup small diced red bell pepper, ¼ cup finely chopped onions, ½ cup grated cheese, 2 tbsp oil, salt to taste, ½ tsp black pepper powder, ½ tsp finely minced garlic, 2-3 tsp cream, water to mix flour

Steps to make Mexican Pocket:

1. In a bowl add wheat flour, cream, salt a pinch and mix into a dough consistency with water. Keep aside the dough for 10-15 mins.

2. Heat a pan add oil, minced garlic, onions and red bell peppers and stir fry for 2mins on low flame do not turn the vegetables into golden brown.

3. Take the mixture off the flame add salt, pepper and cream and mix well.

4. Roll out the dough into small round pancakes and shallow fry (make small chapathis) and then turn them into cone shapes.

5. Fill the vegetable mixture into the cone and top it with grated cheese and microwave it for 1min for the cheese to melt.

Cheesy & tangy treat if served with salsa or tomato sauce.
