Using whole wheat bread and potato, you can make a delicious Potato Vada Sandwich. Potato and whole wheat bread are abundant source of carbohydrates while peas are a good source of fibre, vitamin, and minerals. Flavouring the potato filling with ginger garlic paste and coriander leaves enhances the taste and richness of this yummy sandwich.

2 potatoes, 4 whole wheat bread slices, ½ cup peas, 1 tsp ginger garlic paste, 3-4 sprigs of coriander leaves, salt as required, 1 tsp oil
1. Wash, peel and cut the potatoes. In a pressure pan, add potatoes and peas. Add 1 cup water and pressure cook for 4-5 whistles.
2. Once the pressure is cooled, mash the potatoes and peas. Keep the mixture aside
3. In a pan, add oil. Once the oil is warm, add the ginger garlic paste. Saute for 2 mins on medium flame. Add the potato peas mixture, salt and coriander leaves.
4. Yummy filling for potato sandwich is ready.
5. Take 2 whole wheat bread slices. Fill the filling on one side of the bread and seal it with the other bread.
6. Using a sandwich maker, grill the sandwich or on a pan, toast the potato vada sandwich on both sides till it turns crisp and light brown.
Potato Vada Sandwich is ready to be relished. Serve hot with tomato ketchup.
