For the filling: 1 onion chopped, 1 tsp chopped garlic, 1 tomato chopped, 1 tsp garam masala, 1/4 tsp turmeric powder, 1 capsicum chopped, 1 cup minced tofu, 2 tbsp tomato ketchup,1 tsp chopped coriander leaves, 2 tsp oil, salt to taste
For the Bun: 2 tsp active dry yeast, ½ cup warm water, 1 tsp sugar, 2½ cups whole wheat flour, 3/4 tsp salt, 2 tbsp butter, ½ cup water
1. Heat oil and saute onion and garlic, till onion turns translucent. Add garam masala, turmeric powder and tomato and saute for 3-4 minutes.
2. Add tofu and tomato ketchup, and saute for 5-6 minutes. Add coriander leaves, mix and set aside.
3. Combine ½ cup warm water with sugar. Add yeast, mix gently and set aside for 10 minutes.
4. In a large bowl combine the flour, salt, water and butter. Add the yeast mixture and knead into a dough. Cover and set aside for one and half hours to rise
5. Make small balls from the dough and stuff with the tofu filling. Seal the opening and shape into a mini bun. Cover and set aside for half an hour.
6. Bake the buns for 18 to 22 minutes at 180C till they turn light brown. Serve hot.
