Vegetable cutlets are yummy snacks, but you do not have to buy them from outside. You can make delicious and healthy cutlets at home using fresh vegetables, which are a rich source of potassium, carbohydrates, dietary fibre, protein, Vitamin A, Vitamin C, Vitamin B6, magnesium, iron and calcium.

Ingredients: ½ cup boiled and chopped carrots, 1 cup boiled and chopped potatoes, ½ cup cream, 1 tsp ginger-chilli paste, ¼ tsp. chilli powder, ½ tsp. each of cumin and garam masala powders, 3 tbsp. bread crumbs, 2 tbsp. maida, 3 tbsp. water, oil.
Steps:
1. In a bowl, mash the vegetables and mix them with cream, ginger chilli paste, chilli powder, cumin and garam masala powders and some bread crumbs. Knead into a soft dough.
2. In another bowl, mix the maida with water to form a smooth solution.
3. Shape out patties from the vegetable mix and dip them in the maida solution.
4. Fry them in oil till they are crisp and golden.
