Carrots are a good source of vitamin A(from beta carotene) while rice is a good source of carbohydrates. Using rice, carrots and channa dal, you can prepare nutritious and tasty yellow red rice. Flavour the rice with spices like cinnamon, strand of mace and green cardamom, which has vital vitamin and minerals. Lemon juice which has vitamin C and coriander leaves enhances the taste further.

½ cup rice, 1 tsp channa dal, ¼ onion, 1 carrot, 1 strand of mace, 1-2 green cardamoms, ¼ piece cinnamon, 3-4 sprigs of coriander leaves, 1 tsp lemon juice, 1 cup water, salt as required, 1 tsp oil
1. Wash the rice well. In a pressure pan, put ½ tsp oil. Once the oil is warm, add the strand of mace. Add the finely chopped onion. Saute till the onions turn soft.
2. Add the grated carrot and saute for another 2 minutes. Add the rice and mix well. Add salt and one cup of water. Pressure cook the rice for 2-3 whistles.
3. In a pan, add ½ tsp oil. Once warm, add channa dal, cinnamon and green cardamoms. Saute for 2 minutes and switch off the flame. Once cool, grind to a powder.
4. Once the steam cools down, spread the yellow red rice in a plate.
5. Add the spice powder, lemon juice and coriander leaves. Mix well.
Yummy yellow red rice is ready to relish. Enjoy.
