Aloo gobi is a simple recipe that is easy to cook. It is made using potatoes and cauliflowers, which are rich sources of potassium, dietary fibre, Vitamin C, iron, calcium, Vitamin B6 and magnesium.

Ingredients: 1 medium sized cauliflower florets removed and rinsed, 5-6 potatoes sliced in wedges, 4 tsp chopped ginger, ½ tsp turmeric powder, 1 tsp. Kashmiri chilli powder, ½ tsp. garam masala powder, coriander leaves for garnishing, 4 tbsp. oil, salt.
Steps:
1. Blanch the cauliflower florets for 10 minutes. Drain and set aside.
2. Heat oil in a pan and add the potato wedges. Add the cauliflower florets and sauté.
3. Add salt and chopped ginger. Sprinkle red chilli powder, stir and cover the pan and cook for about 20 minutes on low flame.
4. Sprinkle garam masala, stir. Garnish with coriander leaves and stir.
