This is a traditional Rajasthani dish that is very nutritious and tasty at the same time. It is a good change as it is baked and served with tangy dal. It can be made easily at home within few minutes and is healthy as well.
Contents
For Bafla:
2 cups wheat flour, ½ cup ghee, 1 tsp cumin seeds, 1/4 tsp ajwain, salt to taste
For Dal:
1½ cup soaked toor dal, a pinch of hing, 1 tsp red chilli powder, ½ tsp mustard seeds, 1 tsp sugar, ½ tsp turmeric powder, salt to taste, 1 tsp desi ghee, 2 tbsp chopped coriander leaves
For Bafla:
1. Mix all the ingredients in a large bowl and make a stiff dough. Add little water if required as we do not need a smooth dough. It should be stiff.
2. Now divide the dough into smaller balls and roll them with the help of your palms.
3. Now take a large pan and put some water into it for boiling. Add salt and turmeric to this water.
4. When the water boils then start putting these balls into the water one by one.
5. Cook these balls till they start floating to the surface.
6. Now place these balls on a kitchen towel to drain up the excess water.
7. After these balls are dried up then place them in oven for about 150 degree C till they turn crisp and golden.
For Dal:
1. Pressure cook the dal with salt and turmeric in 31/2 cups of water till 3 whistles.
2. Let the steam escape and add hing. Stir it well and add warm water if needed and if it seems too thick.
3. Heat ghee in a pan and add mustard seeds till they start spluttering.
4. Add red chilli powder and quickly add this tadka to the dal.
5 .Garnish it with coriander leaves.
Serve it with baflas by crumbling them with fingers and adding a tsp of ghee into them.
