Baingan has vital vitamins and minerals like vitamin B, C, K, potassium and magnesium. You can prepare Baingan ka Chokha, a yummy mashed baingan dish. Flavour this dish with spices, onion, and tomatoes, which are the ingredients used raw and are added to the roasted baingan pulp.

1 large brinjal, 2 tomatoes, 2 tsp mustard oil, 1 tsp cumin seeds, a pinch of asafoetida, 1 onion, 2 green chillies, ½ tsp ginger paste, 1.5 tsp coriander powder, salt as per taste, 5-10 sprigs of coriander leaves
1. Wash the brinjal and place it directly on fire or in an oven.
2. Once the brinjal is completely roasted, put it in a bowl of cold water. Remove the peel and take out the pulp. Chop.
3. In a bowl, add the chopped brinjal. Add all the ingredients and mix it very well.
Flavourful Baingan ka Chokha is ready to be eaten with rotis or with litti chokha. Enjoy!
