This stir fry recipe is a simple recipe that can be prepared quickly to try varieties. This bamboo shoot is blessed with vitamin A, E, and B, apart from minerals and dietary fiber.

1 cup bamboo shoots julienned (cut into short, thin strips), 6 button mushrooms slices before adding to the pan, 4 spring onion finely chopped, 1 cup red yellow and green bell peppers julienned, salt to taste, 1 tbsp. olive oil
1. Heat up a cast iron pan on medium heat and add olive oil. Add the chopped spring onions and sauté for 2 minutes.
2. Add bamboo shoots and cook for 2 minutes, add the julienned bell peppers, mushrooms and salt and cook until the vegetables are cooked but crispy.
Prepare and serve as a side dish with rice or with phulka.
