Berry Cream Cake

Prepare this eggless Berry Cream Cake at any occasion and treat all. Strawberries are good source of vitamin C and this cake is a perfect way to include vitamins in the diet.

Ingredients to make Berry Cream Cake:

1 cup maida, 1⁄2 cup unsalted butter, 1 tsp baking powder, 1⁄2 tsp baking soda, 1 cup castor sugar, 3 tbsp curd, 1 tsp vanila extract, 1 cup whipping cream, 3-4 spoon icing sugar, 250 grams fresh strawberries

Steps to make Berry Cream Cake:

1. Firstly prepare strawberry puree from 3/4th of the total strawberries by blending them in mixer.

2. Now sift maida with baking powder, baking soda and mix well. Keep it aside.

3. Melt the unsalted butter, add the castor sugar, stir and mix well.

4. Now in a small bowl whisk 3 tbsp curd and 1 tbsp water till smooth.

5. Add butter-sugar mixture and curd in to the seived flour. Add 1tsp vanila extract.

6. Whisk well to make lump free batter. Add half of the strawberry puree in it and mix well.

7. Transfer the batter in greased mould and bake it in pre-heated oven at 180 degrees for 30-35 minutes.

8. Meanwhile prepare the icing by whipping cream, icing sugar and strawberry puree.

9. The cream whould be whipped properly to have frothy texture.

10. WHen the cake is baked, unmould the strawberry sponge cake, slice it in two parts and apply cream evenly on one part, covering it with another slice.

11. Spread the whipped cream on upper slice evenly. Decorate it with remaining strawberries.

Add sugar in strawberry puree if required. Serve the berry cake.
