Bhindi /okra cut into ½" pieces, 4 tbsp oil, 1 tsp panch phoran, 2 tbsp soaked mustard seeds, 4 cloves garlic, ½ onion sliced, 1 tomato chopped, 1 potato cubed, 1 small piece of dried mango, salt to taste
1. Grind mustards seeds and garlic cloves with 1 cup of water to a fine paste. Keep aside.
2. Heat oil. Fry okra and potatoes and keep aside.
3. Heat oil. Fry panch phoran and onions till onions are soft. Add tomatoes and salt and cook till mushy.
4. Add okra and potatoes. Stir for 2 minutes and add the mustard paste. Mix well and cook covered for 3-4 minutes.
5. Add water to adjust consistency as desired. Add the dry mango and simmer for 3-4 minutes. Serve hot.
