Capsicum fry is a traditional South Indian dish and comes loaded with nutritional benefits. Bell peppers are rich in potassium, dietary fibre, Vitamin A, Vitamin C, Vitamin B6, magnesium and calcium. This recipe is quite easy and simple to follow.

Ingredients: ¾ cup of chopped capsicum, 1/3 cup of chopped potatoes, 1 tbsp sesame oil, ½ tsp mustard seeds, 6-7 curry leaves, 1 green chilly chopped, a pinch of asafoetida, a pinch of turmeric powder, salt, chopped coriander leaves for garnishing.
Steps:
1. Heat the sesame oil in a pan and throw in the mustards. Wait for them to crackle.
2. Add he chopped chillies, hing and curry leaves. Add the potatoes and sauté for some time.
3. As the potatoes turn brown, add the capsicum and masala powders. Cook till the potatoes are done. Season with salt and mix well.
4. Remove from flame and garnish with chopped potato seeds.
