Carrot sambharo is a simple Gujarati side dish and is extremely healthy as it is made from carrots which are rich sources of potassium, Vitamin K, Vitamin C, Vitamin A, dietary fibre, manganese, folate, Vitamin B6, niacin and thiamine.

Ingredients: 4 medium sized carrots grated, 1 tsp mustard seeds, 1 tsp. sesame seeds, 2-3 tsp. oil, 1 green chilli chopped, 1-2 pinch turmeric powder, a pinch of hing, a few drops of lemon juice, salt.
Steps:
1. Heat oil in a pan and splutter the mustard seeds.
2. Add the sesame seeds next and sauté for a few seconds. Add turmeric powder, chopped green chillies, hing and sauté.
3. Add the grated carrots and season with salt. Saute for about 3-4 minutes on low flame.
Carrot sambharo is ready. Add a few drops of lemon juice before serving. An excellent side dish, carrot sambharo is sure to become a favourite. So try it out today!
