This protein packed and nutrients rich Cauliflower Fritters are great to serve and relish. This is a great finger food option.

½ of 1 large cauliflower, 1 tbsp ginger garlic paste, 1 cup besan, 2 teaspoons baking soda, ½ tsp turmeric powder, a pinch of hing, ½ tsp ajwain, ½ tsp garam masala powder, salt, chaat masala, lemon juice, coriander leaves, oil for frying
1. In a food processor, blend the cauliflower, fresh coriander, until they’re finely chopped but not puréed to a mush.
2. Add the besan, baking powder, salt, ginger-garlic paste, spices, and water. Blend perfectly that there are no lumps of flour left.
3. Heat the oil in a skillet, take small portion of mixture in hand and flatten them with hand
4. Deep fry the fritters till they turn golden brown from both sides.
5. Transfer the fritters to the paper towel-lined plate and topped with chaat masala, lemon juice and coriander leaves.
Enjoy the Cauliflower Fritters plain, or serve them topped with a dollop of yogurt or green chutney.
