Cheese Toast Sandwich

Now, who doesn't love a crunchy and cheesy sandwich? It is packed with the goodness of veggies and cheese.

Ingredients: Potato - 1 medium, peeled and mashed, Onion - ¼ cup, finely chopped, Tomato - ¼ cup, finely chopped, Cucumber - ¼ cup, finely chopped, Capsicum - ¼ cup, finely chopped, chopped finely Cilantro or coriander leaves - 2 tablespoons, finely chopped, Salt - to taste, Green coriander chutney - 2 tablespoons, Ketchup - 2 tablespoons, Sandwich bread slices – 12, Butter spread - as required, Cheese slices - 6

Steps:

1. Take mashed potatoes and all chopped veggies and mix. Add salt, green chutney and ketchup. Mix well.

2. Apply butter on bread slices. Top with cheese slice. Spread about 2-3 tablespoons of veggie mixture on the one bread slice and top with another bread slice.

3. Toast the sandwiches in the toaster till crispy and golden brown. Serve hot.
