All of us might not like rice, but this Chicken Rice Patty will be loved by everyone! Chicken is a good source of protein, vitamin B6 and phosphorus, niacin.

1 chicken breast thinly sliced in half widthways, ½ tbsp olive oil, 1 cup cooked rice, ½ cup cooked peas, 1 boiled and mashed potato, salt, and pepper to taste.
1. Preheat oven to 200 ℃.
2. Heat oil in a medium frying pan and cook chicken breast until it begins to brown.
3. Remove from pan and shred chicken using a fork and add cooked rice, mashed potato, cooked peas, salt and pepper and mix well.
4. Grease muffin tray with oil and then spoon the mixture into the muffins and top it with olive oil.
5. Place in the oven for 15 minutes until the tops turn golden brown.
6. Let them sit in the tray for a few minutes. Use a knife to work around the edges of the rice patties to make removing them easier.
