Here’s an appetising protein-packed chickpea and mint soup. Mint leaves contain small amounts vitamin A, C, calcium,and iron. This is a simple and healthy recipe.

½ cup boiled chickpea/chana, 5 to 6 mint leaves, ¼ tsp. ginger powder, ¼ tsp. turmeric powder, ¼ tsp. ajwain powder (carom seeds), 1 tsp. butter cube, ¼ tsp. lemon juice, water as required, salt to taste.
1. Puree the boiled chickpeas and mint leaves using 1 cup water in a blender.
2. In a thick bottom pan, heat ½ tsp. butter and add the chickpea and the mint puree.
3. Cook it for a minute and add ginger powder, turmeric powder, ajwain powder, stir them well.
4. Add salt and lemon juice and let it boil for 2-3 minutes. At this point, you can adjust the consistency by adding more water if needed.
Chickpea and Minty Soup is ready to be served. Top it with ½ tsp. butter cube. Hope you will give a try today to treat with a healthy soup.
