Wondering what to do with over-ripe leftover bananas? Well, you can try making these Mangalore Buns. These buns can be made without an oven. Banana is a good source of dietary fiber, Vitamin C, Vitamin B6, potassium and manganese. You can serve these for breakfast or as a healthy snack. The flavour of cumin powder enhances the taste of these buns.

1 medium very ripe banana, 1 tbsp sugar, ½ tsp baking soda, 2 tbsp. yogurt, 1 cup wheat flour, a pinch of salt, 1 tbsp ghee, ½ tsp cumin powder, oil for deep frying
1. In a bowl mash the banana well with a fork or potato masher.
2. Add the sugar, baking soda, yogurt, salt, ghee, cumin powder to the banana puree(well mashed).
3. Mix them all well and add the wheat flour and knead them into a smooth dough.
4. If the dough is bit dry, you can use little yogurt.
5. Keep the dough covered for 3 to 4 hours at room temperature. You can also refrigerate the dough overnight.
6. Knead the dough well after you have kept it 4 hours or overnight.
7. Roll them into small round pooris.
8. Slide each poori into medium hot oil and fry the pooris till they are puffed and golden.
9. Remove the buns and drain on paper napkins to remove excess oil.
Serve hot or warm!
