Juicy Coconut Barfi

Juicy Coconut Barfi is one of the tasty and juicy desserts, which can be prepared in a jiffy. Give a treat to your child with this juicy barfi. Coconut is loaded with fibre, sodium, calcium, magnesium.

Ingredients to make Juicy Coconut Barfi:

1 cup fresh desiccated coconut, ½ cup full cream milk, ¾ cup jaggery/sugar, 2 tbsp. khova (optional), 1 tsp.cardamom powder, 10 cashews chopped

Steps to make Juicy Coconut Barfi:

1. In a large heavy bottomed pan take a cup of coconut.

2. Add ¾ to 1 cup of sugar depending on your taste.

3. Mix well till the sugar starts to melt, this takes around 2 minutes.

4. Then, add milk, this makes coconut juicier.

5. You can add khova, give a good mix, and keep stirring till it starts separating pan, this takes around 8-10 minutes on medium flame.

6. Add ghee, cashews, cardamom powder and give good mix.

7. Transfer it on a butter paper or a plate coated with ghee and press and set to a square shape.

8. When it is still hot, cut with greased knife to shapes of your desire.
