Kalingad Dhondas is a fudge cake made from watermelon rind. This is an easy and simple recipe. You will just love the taste of this dish. This is a good way of using the fibers of watermelon rind. Watermelon rind is nutrient-rich in citrulline, amino acids, and flavonoids.

2 cups kalingad – white part grated, 1 cup grated coconut, 1 cup rice rava/tandalalcha rawa, jaggery as per taste, 1 tbsp. cashew nuts, and a pinch of salt
1. Roast the grated watermelon rind and add little water and salt.
2. Add rice rava and sufficient water, stir and cook till the rava is half cooked.
3. Add coconut, nuts and jaggery and stir well. Spread them on a pan and cover and cook on a slow flame for 5 minutes.
4. Flip and cook from other side also. Cool and cut into slices. Your Kalingad Dhondas is ready.
Prepare and serve the Kalingad Dhondas along with coconut milk.
