1 cup medium-sized papaya slices, 1 cup medium sized ridge gourd slices, 1 cup medium-sized potato slices, ½ cup green chiles, ½ teaspoon turmeric powder, salt as needed, ½ teaspoon ginger paste, ½ teaspoon garlic paste, Water as needed, 2 tablespoons soybean oil,1 tablespoon onion slices,1 teaspoon coriander powder, ½ cup fried crispy golden brown onion slices/peyaj beresta
1. In a saucepan, add the papaya, ridge gourd, potatoes, green chillies, turmeric powder, salt, ginger, and garlic paste, and a little bit of water. Mix and allow the vegetables to boil.
2. When the water dries up and the vegetables have become boiled, stir well.
3. Heat a pan with oil. Add the onions, fry and add the boiled vegetable mixture and coriander powder. Stir and fry. Stir well until fried well, and the fried crispy onion slices.
Serve hot!
