Malabar Spinach Chutney is a tangy yummy dish with the goodness of spinach. It goes well with rice and rotis . Spinach contains vitamins A, B, C, iron, and calcium, and is a high source of dietary fibre.

Ingredients to make Malabar Spinach Chutney:
3 cups Malabar Spinach Washed, rinsed, chopped, 5 chili peppers dry red chili medium length, 1 cup onion fine cut, 2 cloves garlic medium size, 1 teaspoon mustard seeds, 1 teaspoon Fenugreek seeds, 1 teaspoon tamarind, 1 teaspoon sea salt
Steps to make Malabar Spinach Chutney:
1. Keep all ingredients ready.
2. Cut spinach, onions, and garlic and set them aside separately.
3. Sauté spinach in a half teaspoon of oil for about 3 to 5 minutes and set aside in a bowl.
4. Sauté seasoning ingredients (red chili , mustard seeds, fenugreek seeds) and set aside to cool.
5. Add the seasoning ingredients , turmeric , salt and tamarind to a blender and grind to coarse powder.
6. Add the sautéed spinach to this powder and grind well one more time so that it mixes well.
7. Sauté onions and garlic in one teaspoon of oil till golden brown.
8. Add to the sautéed spinach.
Serve hot!
