Variety always goes a long way in exciting the kids, when it comes to their meals. Why not try this nutritious and tasty Mexican Quinoa for the kids tonight?

Ingredients: 1 tsp. olive oil, 3 cloves of garlic, 2 cup uncooked quinoa, 2 cup vegetable broth, 30 ounce of canned black beans, 30 ounce canned fire roasted tomatoes, 2 cup canned corn, 1 tsp. chilli powder, ½ tsp. ground cumin powder, 1/8 tsp. salt, 1/8 tsp. ground black pepper, 1 medium avocado, 1 medium lime, 4 tsp. cilantro
Steps:
1. Heat the oil in a pot over medium heat. Add garlic and stir while you cook. Keep cooking for about 1 minute.
2. Stir in the quinoa, broth, beans, tomato, corn and spices. Stir and bring to boil. Reduce the heat and cover the pot and simmer until cooked for about 20 minutes.
3. Add the lime juice and cilantro. Garnish with avocado and serve.
Serve this yummy quinoa to the kids and surprise them with your culinary skills.
