Palada Pradhaman is a popular payasam recipe in Kerala. It is a very healthy dish, which is rich in carbohydrates and proteins. This one will certainly lift your mood with a smile.
1/4 cup of flattened rice, 500ml milk, 250ml water, ½ cup of sugar, 4 pods of cardamom crushed, 10 cashews, 10 raisins
1. You need to par-boil it in boiling water for about 3-4 minutes and then drain and set aside before proceeding.
2. Add the milk and water to a heavy-bottomed pan and bring to boil. Add the semi-cooked rice and simmer on low flame stirring frequently.
3. In about 15-20 minutes, it will reduce to half the quantity. Continue to stir and cook the payasam.
4. Soon you will see the ada starting to show on the surface of the payasam. This will depend on the size of the pan you are using, so don't go by this along, just make sure the milk is reduced to more than half of original quantity and the ada is soft.
5. Add sugar at this stage and mix well.
6. Cook for another 3-4 minutes and switch off the flame. Add the crushed cardamom and mix well. Remove from stove and set aside.
7. Heat the ghee in a small pan and add the cashew nuts and raisins. Fry until the nuts turn golden brown and add to the payasam. Stir well to combine.
Serve and enjoy this dish.
