These Pineapple Cupcakes are moist, buttery, and loaded with crushed pineapple. They are paired perfectly with mocktails and contain immunity boosting vitamin C.

1 cup maida, 1 1⁄2 baking powder, a pinch of salt, 2 tbsp powdered sugar, 1⁄2 cup pineapple juice, 1/4th cup butter, 3 tbsp curd, 2 cup cream, 1⁄2 cup icing sugar, pineapple slices, cherries for decoration
1. Combine the plain flour, baking powder, salt and powdered sugar and sieve well.
2. Transfer in a deep bowl and add the butter, pineapple juice, few pineapple pieces and whisk well till smooth.
3. Grease cupcake moulds and fill 3/4 cup with batter.
4. Spread evenly using spoon back.
5. Bake in a pre-heated oven at 200 degree Celsius for 22 minutes or till cooked.
6. Meanwhile, prepare whipped cream using cream, icing sugar. Beat it till fluffy. Transfer into the piping bag.
7. Unmould the cupcakes and pipe out swirls of cream. Decorate with pineapple slices and cherries.
