Sambar has lot of varieties. Some sambar needs time to prepare and some can be done quickly. Ponni sambar is one such sambar, which you can make easily. Sambar powder is not needed for this dish since it gets its flavour from fenugreek, dal, and potato.

1 cup toovar (arhar) dal, a pinch of turmeric powder (haldi), 4 to 6 green chiles (slit), 1 big potato, tamarind (imli) water to taste, salt to taste, asafoetida (hing), 1 tbsp oil, ½ tsp mustard seeds (rai/sarson), ½ tsp fenugreek (methi) seeds, ½ tsp urad dal (split black lentils), 3 to 4 broken red chiles
1. Cook the dhal adding enough water and haldi to a soft consistency in a pressure cooker.
2. Add boiled potato green chillies salt and tamarind paste or juice.
3. Heat oil in a kadai add mustard, methi urad dhal hing and finally broken dry red chillie.
Add this to the boiling dal and cook for few minutes till you get a nice aroma.
