Shakara is a high protein side dish, containing winter melon as the prime ingredient.

Ingredients to make Shakara:
500 gm winter melon, 1 tsp panchaphutan, 4 dry red chiles, 5 garlics, 2 tbsp mustard seeds, salt, 1 tsp turmeric, small portion tamarind, 250 gm jaggery, ½ tsp cumin, 2 tbsp oil
Steps to make Shakara:
1. Grind mustard seeds and cumin seeds into a paste.
2. Wash and cut the veggies. Heat oil in a pan, add panchphutan, dry red chili, crushed garlic.
3. Add the veggies, salt and turmeric and cook for 5 minutes.
4. Once cooked, add paste to the veggies. Blend tamarind and jaggery with water and add them to the veggies.
Cook on a high flame for 5 minutes. Serve hot.
