One of the keys to consuming veggies is in the form of sandwiches. Filled with the carbohydrates and vitamins of bread and vegetables, this sandwich can be served as breakfast or evening treat.

1 boiled potato, 1 small chopped onion, 1 chopped tomato, half capsicum diced, 1/4th cucumber diced, whole wheat bread slices 4, lemon juice, olive oil 1 tbsp, chaat masala as per taste
1. Take a deep bowl and mash the boiled potato in it.
2. Add chopped onions, tomato, capsicum, cucumber and mix well.
3. Sprinkle Chaat masala and add lemon juice in it. Toss well.
4. Place the mixture over one bread slice and cover it with another slice.
5. Brush the sandwich with olive oil from both side and grill the sandwich.
Serve it with homemade tomato ketchup or cheese dip.
