½ cup glutinous rice soaked & drained, ½ tsp salt, 2 cups coconut milk, 4 sugar palm fruit peeled & diced, 3 tbsp liquid palm sugar
1. Heat rice, salt and half of the coconut milk. Bring to the boil, then simmer for 5 minutes, stirring occasionally, until the rice softens.
2. Add the sugar palm fruit and remaining coconut milk to the rice. Stir well and cook for a further 5 minutes until the rice becomes translucent.
3. Stir in the palm sugar and cook for a further 2 minutes. Serve warm.
