A hassle free, quick and tasty meal made with lemon juice is apt while travelling and at home too. Little tangy, this sunshine rice is easily digestible and rich in vitamin C. This sunshine rice can also be given as a lunch or dinner.

Basmati rice 1 cup, 1 tbsp lemon juice, ½ tsp mustard seeds, ½ tsp urad daal, 5-6 curry leaves, ½ tsp turmeric powder, 3-4 cashews, 7-10 peanuts, a pinch of asafoetida, salt as per taste, 2 tbsp sesame oil, water
1. In a deep pan add water and rice and allow it to cook.
2. When cooked, strain the excess water from rice.
3. Heat the oil in a broad non-stick kadai and add the mustard seeds.
4. When the seeds crackle, add the asafoetida, urad daal, curry leaves, cashews and peanuts and saute it on medium flame.
5. Add the turmeric powder and cooked rice and mix well and cook on a medium flame for 1-2 minutes while stirring continuously.
6. Add the lemon juice and salt, mix well and cook for another 1 minute. Keep stirring.
7. Switch off the flame and serve in a rice bowl.
You can add powdered nuts instead of whole cashews/peanuts.
