A sweet and tangy pickle called Sweet Lemon Pickle is made using lemons, sugar, and rock salt. Lemons are a great source of vitamin C, while rock salt, the purest form of salt, boosts immunity and improves digestion.

10-15 lemons, ½ cup rock salt, 3.5 cups sugar
1. Wash the lemons very well. Wipe them.
2. Cut the lemons into quarters.
3. Take a clean dry glass bowl and put the cut lemons along with rock salt.
4. Cover the bowl with a lid and keep it aside in a cool place away from heat for a week. During that period, toss it well everyday. Avoid using your hands or spoon.
5. Once the lemon gets matured, transfer the mixture in a non stick pan and add sugar.
6. Cook on low flame for about 20 minutes, stirring continuously.
7. Switch off the flame and allow them mixture to cool down completely.
Sweet-tangy lemon pickle is ready. Transfer the pickle into an airtight glass jar. Serve it with chapatis, parathas, dosa, or simple curd rice.
