Vangibath, a light spicy rice dish made along with sauted brinjal is a very popular Karnataka cuisine. It can be prepared with left-over rice an is quick and simple to make.

1 cup boiled rice, 1 cup cubed brinjal, 1 onion chopped, 2 green chiles, ½ cup tamarind pulp, 1 tsp fenugreek seeds, 1 tsp mustard seeds, 1 tbsp sambhar powder, 1 tsp haldi, 2 tbsp sesame oil, 1 tbsp urad dal, 1 tbsp chana dal, 2-3 cloves, chopped coriander, a string of curry leaves, salt to taste, cashewnuts
1. Heat 2 tbsp oil; add mustard seeds, methi seeds and let them crackle. Add urad dal, chana dal, cloves, haldi, curry leaves, stir and cook for a minute.
2. Add brinjal, salt and saute. Cover and cook for 2-3 minutes.
3. Add tamarind juice, sambhar masala, mix well. Add little water if required.
4. Add cooked rice; mix well. Cook for 2-3 minutes while stirring occasionally.
Garnish with coriander leaves and cashews. Serve hot.
