A delicious, healthy African stew is perfect for winter evening. It is rich in iron, vitamins, calcium and many minerals.

2 tbsp olive oil, 2 cups chopped yams, 1 large onion chopped, 1 cup chopped cabbage, 2 tomatoes chopped, 4 tbsp flaked coconut, 2 cloves garlic minced, 2 cups tomato juice, 1 cup apple juice, 1 tbsp minced ginger, 1/4 tsp pepper, salt to taste, 1 green bel pepper chopped, ½ cup peanut butter
1. Heat oil. Cook and stir yams, onions, cabbage, tomatoes, coconut, and garlic in the hot oil until the vegetables are slightly browned.
2. Pour tomato juice and apple juice into the pan; sprinkle ginger, pepper, and salt. Reduce heat to medium-low and cook.
3. Stir bell pepper and peanut butter into the mixture. Cook, stirring regularly, until the peanut butter is melted completely into the soup.
Serve with brown rice.
