Vegetable Pakoras - a great way to hide all the nutritious vegetables behind taste and definitely everyone wouldd ask for more everytime you serve . These pakoras do have calories along with vitamin A, vitamin C, and antioxidants.

1 medium carrot juliened, 1 capsicum diced, 1 cup shredded cabbage, 1 onion thinly sliced, 4-5 French beans chopped, ½ cup besan, 1/4th cup rice flour, 1 tsp carom seeds, 2 green chillies chopped, mint and coriander leaves chopped, 1 tsp ginger-garlic paste, ½ tsp garam masala, salt as needed, water and oil for frying
1. Take all the veggies in a deep bowl. Add green chillies, carom seeds, garam masala, mint and coriander leaves, ginger-gralic paste. Mix well.
2. Squeeze them to release excess moisture.
3. Add besan and rice flour. Add little water a time and make thick batter or lose dough.
4. Heat oil in a deep skillet and pour small portions of dough into skillet. Fry on a medium heat until turns golden brown.
Serve with fresh green coriander mint chutney.
