Your kid becomes bored of eating the same idlis now and then. So now to add a twist to it, this recipe will become a hit with potato and chutney. Potato and rice are rich in carbohydrates and fat; coconut chutney is rich in fiber, calcium, folic acid and magnesium. It can be prepared as an evening snack.

Ingredients: 2 cups of idli batter, 1 tsp oil for greasing.
For potato bhaji: 1 cup boiled potato, peeled and mashed, 2 tbsp oil, 1 tbsp mustard, 1 tbsp urad dal, 5 curry leaves, 2 green chillies slit, 1/4 tbsp asafoetida, 1/4 tbsp turmeric powder, ½ cup finely chopped onions, ½ tbsp chilli powder, 2 tbsp coriander, salt to taste.
To be blended into thick coconut chutney (using ¼ cup of water): 4 tbsp freshly grated coconut, 2 tbsp roasted chana dal, 1 tsp roughly chopped green chillies, 2 tbsp chopped coriander, 3 curry leaves, salt to taste .
Steps:
1. For potato bhaji: Heat oil in a broad non-stick pan. Add mustard seeds, urad dal and saute on a medium flame for 1 minute.
2. Add curry leaves, green chillies, asafoetida, turmeric powder and onions. Saute on a medium flame for 1 to 2 minutes.
3. Add potatoes, chilli powder, coriander and salt, mix well and cook on a medium flame for 1 minute, stir it occasionally. Discard green chilies and keep aside.
4 Grease the idli stand with a little oil and put 1 tbsp of idli batter in each mold and spread it lightly.
5. Put ½ tsp of coconut chutney and 1 tsp of potato bhaji.
6. Cover it with ½ tbsp of idli batter over the bhaji in each mold. Steam in a steamer for 12 minutes or till the idlis are cooked.
7. Repeat steps to make more idlis.
8. Allow the idlis to cool slightly and de-mold them.
The recipe is completely healthy and tasty. Serve it with chutney and sambhar. Your kid will enjoy it and in no time the plates will be empty.
