Shallow fried Mushroom Tomato Mash has its main ingredient as mushrooms, which have a wide range of nutritional benefits. These ordinary mushrooms are super dense with extraordinary nutrients, including having more copper, potassium, protein and selenium. They're also a good source of phosphorus, zinc, niacin and pantothenic acid, especially when you cook them down and eat more than one cup at a time. The aroma and taste of this dish is unbeatable, which makes it very popular among children and adults.

Tomatoes-1 small, cashew-few, mushrooms-1 cup, carrots-1 small, oil-1 tsp and salt-to taste
1. Wash and chop down tomatoes, carrots and mushrooms.
2. Heat small amount of oil in a pan and add chopped tomatoes, carrot and mushrooms. Stir and fry for 10 minutes.
3. Add salt. Sauté for 2 minutes and turn off the flame.
Serve hot.
