Sooji Cubes

A delicious sweet can be made using sooji, milk and sugar. The sweet is called Sooji Cubes. Sooji and sugar have good amount of carbohydrates while milk has essential calcium. The sweet is flavoured not only with healthy nuts and cardamom but also edible camphor, which adds its own unique flavour to the sweet.

Ingredients to make Sooji Cubes:

1 cup sooji, 1.5 cups milk, 1 tbsp ghee, 2-3 green cardamoms, ¾ cup sugar, 3-4 cashews, 3-4 raisins, 1 piece of edible camphor

Steps to make Sooji Cubes:

1. Boil milk and allow it to cool.

2. In a pan, add 1 tsp ghee and fry the cashews and raisins for 2 minutes. Keep aside.

3. In the same pan, add ghee. Add the sooji and saute for 8 to 10 minutes or till the sooji turns light brown.

4. Add the milk carefully and keep stirring to avoid lumps.

5. Add sugar and mix well.

6. Add crushed cardamom, cashews and raisins. Give a mix and spread the sooji mixture on a greased plate evenly.

7. Make a centre in the sooji mixture. In a small steel bowl, add camphor and light it.

8. Keep the bowl in the centre of the sooji mixture and cover it with another plate. Leave the camphor for about 2-3 minutes till the flavour gets into the sweet. Remove the bowl.

9. Cut the sooji mixture into small squares.

Delicious Sooji Cubes are ready to relish, either after a meal or as an evening snack.
