Soups are a great way to consume veggies. This Sweet Carrot Soup is full of vitamins and minerals like vitamin A, vitamin C, iron and potassium.

Contents
2 cups grated carrots, 4 cups vegetable stock, 1⁄4 cup honey, 3 garlic cloves minced, salt to taste, 2 tbsp cream
1. Take carrots, vegetable stock, honey, garlic and salt in a large saucepan.
2. Bring to a boil, reduce the heat and simmer for 30 minutes until the carrots are tender.
3. Puree in a blender. Add cream and serve hot.
