Looking for a simple, one pot and highly nutritious meal? Try Coriander and Beans Khichdi. The main ingredient used in this recipe is moth beans. Moth beans, also known as Matki, are a good source of protein. Along with rice, which is rich in carbohydrates and adding vegetables like carrots, red pumpkin, bottle gourd(lauki) or ridge gourd(turai), you can make it even more wholesome for the tummy. These vegetables are easy to digest when used in khichdi. Red pumpkin is being used in this recipe, which is rich in vitamin A and C.

The ratio of dal to rice(1 tbsp dal for every 2 tbsp rice), ¼ tsp ghee, 7-8 pieces of red pumpkin, finely minced 2-3 coriander leaves, salt to taste
1. Wash the moth beans and rice well. Soak the rice and moth beans for at least 4 hours. Keep it aside.
2. In a pressure cooker, add 1/4th tsp ghee. Add the pumpkin pieces and saute for a minute.
3. Add the soaked rice and moth beans. Also, minced coriander leaves. Mix well and add salt.
4. Add 1 cup water. Cover with cooker lid and pressure cook till 3 whistles. Switch off the flame.
Delicious Coriander Beans Khichdi is ready. The khichdi should be in a semi-liquid state. Add the remaining ghee to the khichdi and mix well.
