Creamy Pumpkin Soup is a perfect delight! Orange-colored vegetables and fruits are extremely nutritious, as they contain valuable vitamins and minerals such as beta-carotene and potassium. So make sure you eat atleast 1-2 servings of orange veggies or fruits daily. This creamy pumpkin soup has all the right nutrients and is yummy too!
1 tsp olive oil, 2 small onions, chopped, 1 1⁄2 kg pumpkin, peeled and chopped, 750 ml water, 2 tsps cream, salt to taste
1. Heat oil and saute onion for 3 minutes until soft and translucent.
2. Add pumpkin and water.
3. Bring to the boil and simmer covered for 20 - 30 minutes.
4. Puree with a stick blender till smooth.
5. Add cream and serve hot with breadsticks or cheese straws.
Even if you are the pickiest of eaters, still won’t be able to resist this creamy savoury delight called Creamy Pumpkin Soup!
