Lotus seeds are extremely healthy and nutritious and a very good source of calcium, protein, magnesium, potassium and phosphorous, making this porridge ideal for your diet. It is easily digestible and makes a good travel food too.

Half a cup (10-12) Lotus seeds, palm sugar or jaggery, half a cup of milk, one teaspoon sugar, a pinch of cardamom powder (optional)
1. Cut the lotus seeds in half and check for worms or fungus. Heat the ghee in a pan and add them to it.
2. Roast them for three to four minutes on a low flame till they become golden brown and crispy.
3. Once cooled, crush the roasted seeds using a grinder or food processor. You can sieve it after this process.
4. Put the crushed powder in a pan and add milk into it. Cook the mixture for six to seven minutes on a low flame. Keep stirring it for the required consistency and make sure that there are no lumps. Note: If baby is less than 12 months, add water instead of milk. If you have excess breastmilk, you can mix bm with the porridge just before feeding. Do not heat the breastmilk.
5. Add palm sugar or jaggery and cardamom powder.
Your nutritious porridge is ready.
