1 tablespoon ghee, 1.5 tablespoons ragi flour, 1.5 cups hot milk, ¼ cup of sugar, ⅛ tsp cardamom powder
1. In a thick bottomed pan or kadhai, heat ghee on low flame. Add ragi flour.
2. Roast the ragi, stirring continuously, for about 2 to 3 mins on low flame.
3. Add 2 tablespoons of hot milk. Keep stirring continuously so the ragi flour combines well in the milk; the mixture should be smooth and lump free.
4. Now pour the rest of the hot milk and stir well.
5. Add sugar and stir well. Sprinkle cardamom powder.
6. Simmer for 2 to 3 minutes on low flame until the kheer thickens.
Serve ragi kheer hot or chilled as a breakfast or dessert. What a sweet treat for your darling, isn’t it?
