Aloo Ki Kadhi

It is a light and tangy recipe that is made from curd and potatoes. This can be consumed during the fast and it has a very unique taste whichy you will love to eat in lunch time.

    Ingredients to make Aloo Ki Kadhi:

    ½ kg boiled and peeled potatoes, mustard oil for cooking, ½ cup sour curd, ½ tsp ajwain, pinch of hing, 1 chopped green chili, ½ tsp ginger paste, ½ tsp turmeric powder, salt as per taste, water as required for curry

    Steps to make Aloo Ki Kadhi:

    1. Take a bowl and mix boiled and cubed potatoes with red chilli powder and salt.

    2. Keep them aside for some time.

    3. Now add oil on a non-stick tawa and when it becomes hot then start frying these peeled potato pieces.

    4. Fry them till they become golden brown in color.

    5. Now drain them on an absorbent paper and let the extra oil absorbed on the paper.

    6. Now take a pan and add oil to it. Heat the oil and add hing and ajwain.

    7. Then prepare a batter with curd and water and add this batter to the oil.

    8. Bring it to a boil and let it cook on the low flame for a while till it starts thickening.

    9. Stir it well so that it does not get burnt from the bottom. Add turmeric powder and salt.

    10. Now add potato pakoris to the mixture and garnish with coriander leaves as well.

    You can serve this hot with rice or parantha.
